What better way to start up this account than with a tall stack of vegan buckwheat pancakes🥞🤤. I had school off today and you bet I took that opportunity to make a bomb af breakfast😏. Don’t have any plans for today, so it’ll probably be a slow day filled with lots and lots of Netflix and I ain’t even mad about it🤷🏼♀️. Hope you all have a wonderful Monday and start this week out with a bang👊🏼💓.
Vegan Buckwheat Pancakes Recipe🥞:
• 1/4 cup raw buckwheat groats (ground into flour in a blender/ food processor)
• 1/8 cup brown rice flour
• 1/2 tbsp corn or arrowroot starch
• 1/2 tbsp baking powder
• 1/2 tsp vanilla extract
• 1 tbsp liquid sweetener of choice (I used a few drops of stevia, but you could use maple syrup, agave, etc.)
• 1/2 cup plant milk (I used soy)
• 1/4 of a zucchini *optional* but I wanted the #extrahealth
Directions👉🏼 blend the buckwheat until it forms a fine flour, add in the rest of the ingredients, and blend until your batter is ready. Heat a pan over medium heat and add some coconut oil so the pancakes don’t stick. Flip your pancakes like you would with any other recipe, plate, top, and enjoy! I added banana slices, blueberries, cacao nibs, almond butter, and maple syrup🍌🍁
