Got a little tied up this morning and getting a late start on my breakie.
I admit that in the past I used to be a chronic meal skipper when I got busy.
But now I’ve got access to healthy, quick and easy meals so it isn’t as much of a problem anymore🙌🏽🙌🏽 Convenience is part of the solution when your a busy lady.

A simple chickpea and sweet potato curry with brown rice and quinoa :)
Our bodies are amazing. From the time we are born, our bodies know that we must oxygenate our blood. It knows we must fuel ourselves for energy. It knows that we must move around and get our blood circulating. Everyday, our bodies pump quarts and quarts of blood though our veins. When we get cut, our body knows to clot the blood at the sight so we don’t bleed to death. This is all done without us doing a thing or even thinking about it. This is why I find it so vital to fuel my body well and care for it. My body is a beautiful, amazing machine that performs wonderful tasks everyday. Many people do not think about this though and treat their bodies like trash; depriving themselves from sleep and nutrition just to make the most money or have a six pack. We must fuel and treat our bodies well. If we do so, our bodies will treat us well; I t’s a two way relationship. I fuel my body with whole plant foods, get my blood pumping and heart rate up on the daily, make sure I get adequate sleep, and try my very darn best to listen to my body. What do you do for your body?

Cookies and milk.
#vegan chocolate chip cookies & #plantbased milk that is... AND, of course, baby hands...
What’s better than that?
I am also lucky enough to be working with one of my favorite brands: @lilys_sweets_chocolate as a sweet #sponsor so I used a LARGE amount of their stevia sweetened non-GMO baking chips in the dough...
These are some of the easiest and YUMMIEST #glutenfreevegan chocolate chip cookies we’ve made in a while. No joke.
Here’s the full recipe- (this will make about 16 cookies give or take- depending on size and how much dough you manage to eat before they actually go into the oven 😳😁)
2 cups (GF) oat flour
1 cup coconut sugar 🌴
1 tsp baking soda
Seeds scraped from one vanilla bean
2 generous pinch of Himalayan salt
1 cup @lilys_sweets_chocolate baking chips
1/4 cup coconut oil
2 tbsp almond milk
2 tbsp coconut milk
Mix all the ingredients in a bowl and set in the fridge for 1-2 hours
Preheat the oven to 160C (325 F) and once the dough is cold, form medium cookie sized balls, flatten a bit and place on a lined baking tray.
Bake for 12 minutes and let cool for at least 20.
Serve and enjoy! ❤️
I served these with homemade #almondmilk and EXTRA #chocolatechips
And as usual- that’s my daughter’s little hand getting into the cookies before I actually get to photograph them. 🤷🏼♀️🤗🍪
FYI- the dough is pretty good too. And guess what? Since it’s vegan- you can eat it #raw !!!!! I mean, HELLO COOKIE DOUGH!
