Cookies make me happy! 😊 they're my favorite in the family of treats, not cupcakes or tarts or cheesecakes, but simple cookies.
The smell of these big babies and their taste takes me back to simple happy times in our family's kitchen. There was this one fantastic cookie recipe we used to always ask for and help my mom make on weekends, I think we used to call them vanilla butter cookies, that was our absolute favorite! The way our hands would get all buttery from rolling the dough, and then all sugary from dipping the flat circle into sugar -while eating half of them on the excuse that that one broke!- the way they would melt in the oven and stick to each other, becoming huge crunchy squares instead of circles. And the smell, my god the smell! No wonder that smells are the biggest trigger of memories ❤️
I'm done with poetry I promise and next comes the recipe, which I fell upon by mistake while trying to make healthy biscuits for a lazy cake. Needless to say no lazy cake was made ;) I also have to warn you that this isn't a 'healthy cookie'. It is clean (oats & wholewheat, grass fed butter, no refined sugar) but it's still basically sugar & butter. So steer clear if you're looking for nutritious baby snacks or are in the January dieting crowd. Otherwise, please indulge!
✔️3/4 cup rolled oats (blitzed into flour in a processor)
✔️ 2/3 cup wholewheat flour
✔️ 1/3 cup coconut sugar
✔️ 75grams butter (3/4 of a stick)
✔️ 1 tbsp milk
Combine the dry ingredients in a bowl and mix. Melt the milk and butter in a pan until liquid. Gradually add them to the dry and mix well until you get a soft dough. Careful not to add all together you might not need them all. Stop when the dough comes together enough to form a ball. Roll them into balls and press into a thin cookie on a greased or lined cookie tray. Bake for around 12-15 mins in a 180deg preheated oven, or until golden on the edges and the back.

It’s late for dinner time (story of my life) and I need something quick to make. Believe me or not, this dish is actually easy and quick. And my girls loved it! (No hot sauce for them though). Ingredients :
4-8 collard greens
1 pound lean protein (chicken, fish)
cauliflower rice (I bought a bag of organic cauliflower rice at Costco and keep in my freezer 👌🏽) peppers sliced thin
cucumbers sliced thin
red onions sliced thin
1 avocado or more
Optional hot sauce or salsa
You can spice the chicken however you wish. I did mine with salt, pepper, crushed garlic and a little cumin. Cut in to thin strips and cook on stove top. While chicken is cooking, warm the cauliflower rice in a pan with olive oil. Meanwhile boil water in a pan big enough to fit collard greens and emerge greens in the boiling water for 30 sec or less. Just enough to make it limp. When chicken is done, add all ingredients on a flat green and roll up! Garnish with the avocado and hot sauce!!! 🙌🏽🙌🏽🙌🏽

Healthy eating tip of the day... Make extra for dinner (sometimes I double batch dinners) to prep for lunch for the next day! Or dinner for a busy night during the week.
Put the left overs AWAY before you start eating too. That way it helps you avoid going for seconds!
More greens than carbs! Make sure you get your veggies in! They are my staple!
