Food prep before a long busy week! I love roasting sweet potatoes to have on hand for salads. My favorite salad, on the menu this week, is kale, chicken breast, toasted sliced almonds, apple, crumbled goat cheese, roasted sweet potatoes and balsamic vinaigrette.
