Dinner - tandoori tofu, coconut slaw, chickpea pancake (a @mindfulchefuk recipe). Rosie ate loads of the pancake and tofu but didn't touch the slaw. I'd like to give her more tofu, it's such a good source of protein and calcium, but I find it difficult to prepare meals when she's not at nursery, she is so demanding and requires 100% attention from both parents! Even if my husband takes her to the park, I'm knackered after a day of intense childcare and want to make easy food! So if anyone has easy/quick tofu recipes, I'm all ears x
