Nourish Bowl Vibes 🥗🌱
After seeing the beautiful @littlevegansparrow breakfast post and given the fact I don’t really like beans - it’s a Mexican style Buddha bowl. 🥗🍴🌱
Whole grain mexican style rice, Heinz five bean mix, juicy tomatoes, greens and sliced avocado with a sprinkle of paprika. 🥗🌱
Not forgetting the little spoonful of pickle. 🥄🌱
Have to say - still not overly convinced on baked beans but the kidney/haricot in this actually tasted pretty good, and sometimes the simplistic ‘pop it all bowl’ meals are the best. 💁🏼♀️🥗🌱
I have had probably the longest day in long time - so I’m currently eating this nourish bowl, deciding what to watch on Netflix (if you lovelies have any suggestions let me know🙋🏼) and yes, I am one of those people who already has their pajamas on. Where my PJ Sunshine’s at? 🙋🏼☀️🙈

Dinner tonight was a Buddha bowl made by @izzieyogi 😋 consisting of roasted sweet potato and butter beans, wilted spinach, veggie mushroom sausages and halloumi! Now off to a gig for her birthday🤗

A #buddahbowl that mixes delicious with budget-friendliness. Did y’all know if you put something in your amazon cart and then take it out, you’ll get an amazon deal on it a week or few days? That’s one way I stock up on grains like the Carolina Gold rice that anchors this bowl. I’ve got blackened sweet potato (buy a big bag at a farmer’s market or when on sale—store in a cool dry place for a month or two), raisins (store brand), baby kale and grape tomatoes (used a digital coupon for each from @krogerco ), field peas with snaps (watch the sale papers and stock the freezer when on sale), and some tempeh that was on markdown because it was close to the sell-by date at a local market. I made a copycat of a popular sriracha-roasted garlic bbq sauce (I try to stock my pantry with ketchup, molasses, and lots of spices when I have spare $).
